DPC is a non-profit organization of education, industry, and regulatory personnel concerned with milk quality, sanitation and regulatory uniformity. The DPC develops and disseminates educational guidelines for proper sanitation practices in the production/processing of milk, and the manufacture of dairy products. Guidelines also address many basic dairy management issues of interest to small dairies, for example: planning dairy stall barns; natural ventilation for dairy tie stall barns; tunnel ventilation for dairy tie stall barns; fundamentals of cleaning and sanitizing farm milk handling equipment; raw milk quality tests; and many, many more.

Offers a 1-year certificate program in grass-based dairying. The course provides
opportunities for internships, mentoring, farm tours, and networking with experienced
grass-based dairy farmers. You can also learn about grazing sheep, goats, and

Value-Added
The New York State Farmstead and Artisan Cheese Makers Guild was organized in November 2003 to foster a strong and vibrant farmstead artisan cheese-making sector in the state and to support its growth. The Guild was incorporated in 2007. Our goals include:
- Encouraging excellence in New York State farmstead and artisanal cheeses resulting from appropriate continuing education and technical assistance to cheese makers at all levels of competence;
- Assisting in the development and adoption of procedures that will ensure public health safety with regard to production and processing of milk;
- Advocating the continuation and preservation of family farms while promoting farmstead-scale cheese making as a craft and livelihood in the State;
- Seeking out and using farm management practices that nourish and sustain the soil and the soul of the surrounding landscape and community.
The Guild addresses the need for a collective trade organization for the growing number of small-scale cheesemakers in New York State. In addition, the organization will develop a voice and a collective market presence for farm-based and artisan cheese makers.
